Our bread
Patience is the main ingredient.
Every loaf starts two days before it reaches your table: a wild-yeast starter, thoughtfully sourced simple ingredients, a slow cold rise, and a blistering hot oven.
Our name comes from the mountain and how we think about food - the rhythms of nature, simple ingredients, natural fermentation, and the patience to let something great take shape. We brought that Pacific Northwest patience to Indiana and put it into bread. Time does the work. A long, natural fermentation develops deeper flavor, a crisp, golden crust, and a light, tender crumb while making the bread easier to digest.
We keep the ingredient list short and the batch sizes small so nothing gets rushed. What doesn't meet the standard doesn't go on the table.
